Mint and chocolate has been my husband’s favorite combo for as long as I know him. Although he has not refused any other chocolate treats, I know a refreshing minty chocolaty treat is what makes him weak to his knees.

Lately, our daughter has been following his footsteps. Wherever we go, she wants mint chocolate chip ice-cream, mint filled cookies and from all the candies she received from the Easter bunny, she only ate the peppermint patties. And, can you blame her?

Peppermint patties are good on their own,but they are taken to a whole new level when chopped and baked inside soft cookies and, once the cookie is baked, placed on top of a warm cookie and topped with a minty chocolate ganache. Trust me!(Double the mint) Peppermint patty cookies recipe (2)

To make these cookies, it’s really easy. They may look intimidating but don’t fear, they are a breeze to make.

Just like any other cookies start by creaming the soft butter with sugar. Only brown sugar is used in this recipe to keep the cookies soft. In fact, they stay soft for days stored in an air-tight container. You can even store them in the freezer for about a week, pull them out, and bite into some heavenly minty goodness! Defrosting is obviously optional.

Once the butter and sugar are creamed, add few drops of peppermint extract. Peppermint extract is one of those pantry samples that go a long way. Only a few drops are needed to give the extra minty touch to desserts. Just be very careful to not add too much!

One egg goes in next, followed by all-purpose flour and a leavening agents. Baking powder is added to give these soft cookies a little lift.

Gently fold in the chopped peppermint patties and scoop the cookies on a baking sheet. Bake in preheated oven for just 14 minutes and as soon as the cookies are baked, top them with another peppermint patty. Just press it gently onto the top of the cookie, similar with a peanut butter blossom cookie. The warmth of the cookie will slightly melt the patty.

Finish the cookie with a spoonful of chocolate ganache and let it run on the sides of the cookie. Ganache makes things so much better, don’t you think? And it’s so easy to make. Ingredients

    Cookies

  • 1/2 cup (113 grams) unsalted butter, room temperature
  • 1/2 cup (100 grams) packed brown sugar
  • few drops peppermint extract
  • 1 egg
  • 1 3/4 cup (210 grams) all-purpose flour
  • 1 teaspoon baking powder
  • 6 York peppermint patties, chopped
  • Topping

  • 12 York Peppermint Patties
  • Ganache

  • 2/3 cup (110 grams) unsweetened chocolate chips
  • 1/4 cup International Delight York® Peppermint Pattie Coffee Creamer

Instructions

  1. Heat the oven to 350F. Line a baking sheet with a silicone mat or parchment paper . Set aside.
  2. Add the butter and sugar to a mixing bowl and, with the paddle attachment on, beat on low speed until light and fluffy.
  3. Beat in the peppermint extract and the egg. Gently fold in the flour and baking powder and stir until just combined.
  4. On low speed, stir in the chopped york peppermint patties for few seconds.
  5. Turn the mixer off and with a large ice-cream scoop , drop cookie dough on the prepared baking sheet .
  6. Bake in preheated oven for 14-15 minutes.
  7. As soon as you remove the cookies from the oven, top each cookie with a york peppermint patty gently pressing it in.
  8. Let the cookies cool completely.
  9. To make the ganache, in a small heatproof bowl add the chocolate chips and the International Delight York® Peppermint Pattie Coffee Creamer. Heat in the microwave for 1 minute. Stir until combined. Heat for few more seconds if needed.
  10. Spoon a little ganache over each cookie, letting it run on the sides.
  11. Let the ganache set before you serve the cookies
