Pumpkin Spice Muffin Ingredients
- 1.5 cup pumpkin puree
- 1 tsp baking soda
- 1/4 cup coconut sugar
- 1/4 cup brown sugar
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp nutmeg
- 1/8 tsp allspice
- 1/8 tsp cloves
- 1.5 cups gluten free flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 large eggs
- 1/3 cup butter melted
Crumble Ingredients:
- 2 tsp cinnamon
- 1/4 cup coconut sugar
- 1/4 cup gluten free flour
- 1/4 cup butter melted
Instructions
Pre-heat your oven to 350°F. Line a muffin pan with muffin liners.
In a medium mixing bowl, combine pumpkin, baking soda, coconut sugar, brown sugar, salt and spices. Mix until thoroughly combined.
Add eggs vanilla extract to the pumpkin mixture and mix until thoroughly combined.
In a small mixing bowl, combine flour and baking powder, and mix thoroughly until combined.
Add flour mixture to pumpkin mixture and mix thoroughly until combined.
Pour melted butter into the muffin batter and mix thoroughly until combined.
Scoop batter evenly into muffin liners.
In a small mixing bowl, combine all dry crumble ingredients and mix thoroughly.
Add melted butter to dry ingredients and stir with a fork until a crumble texture appears.
Sprinkle crumb topping on top of the muffins.
Bake muffins for 25 minutes or until a toothpick into the center comes out clean.

Hi thanks for the recipe but can I use regular flour my husband doesn’t like gluten-free anything. I’ve tried to buy him cookies and he wouldn’t need them.
I I use organic sugar sugar. Can I use that instead of coconut sugar?

I baked these muffins today and they are delicious. I had an issue with the melted butter for the crumb topping. I will need to use less butter since the mixture was runny and crumbly. I added more flour then spooned the topping on before baking. Very yummy! -

I’ve been making pumpkin muffins with a very similar recipe using almond flour. Nutritious and low calorie is a big plus. Makes a great breakfast along with homemade healthy granola. -

Best pumpkin recipe I have ever baked! Amazing spice mix is the key. Not too sweet and very moist. I used an organic white flour instead of gluten free flour. Also, I mixed all the dry ingredients together first and then added the mixture of wet ingredients into it. If I could, I’d rate it a 10! -

Would omitting the brown sugar affect the consistency of the batter. I’m avoiding refined sugars. These sound and look delicious.
